CHEFS
Youngseuk (Tony) Kim,
earned South Korea's National Technical Certificates
(craftsman cook: Japanese food and Fugu) in 1988 and in 1990.
Tony built his career at Ariake (The Shilla Seoul), Yamazato (Hotel Okura Tokyo)
and Sushi Horikawa in Tokyo for decades.
In Canada, Tony assisted and helped set up a number of leading sushi restaurants
throughout the Lower Mainland and Victoria.
